Getting enough protein in my diet is often a challenge. So yesterday, I was sent this recipe and within five minutes of receiving it (thanks, Michelle C.), I cooked it up.
Protein Almond/Peanut Cookies
3 cups of natural almond/peanut butter
1 cup-ish of demerera sugar
2 large eggs
3 scoops of brown rice protein powder (no flavour)
4 Tsp of ground flax
Heat oven to 325
Mix ingredients
Roll cookies into balls and flatten with fork
Bake for 15 minutes
Let stand
This made 3 dozen for me. I made each ball roughly the size of a ping pong ball.
Stirring the dough was a big workout, as I used 100% natural peanut butter which had been refrigerated, and the oil had solidified.
I didn't use any almond butter, as I had none.
I found the cookies are on the dry side, so next time, if the peanut butter isn't oily enough, I'll add a bit of milk to moisten them up. These taste comparable to a protein bar, and are very filling.
