Yesterday, kung fu made my day. Although I had a case of the stupids by the end, I made it all the way through without having to use my puffer or sit any bits out. My horse stance was a bit inconsistent during the various exercises, but I was able to keep it nice and low, with my thighs parallel to the floor quite often, including throughout gung gee. I was also able to do a bunch of pistols (the exercise where you squat low to the ground on one foot, with the other leg extended straight in front. Then you stand up, and squat back down to repeat). I admit, my pistols are trembly, but I couldn't even do half-assed wobbly ones six weeks ago.
In celebration, I want to make cookies today. I found a recipe for pumpkin cookies I want to try. And to continue in my home-made internet meme, I will be sharing them with whoever comes by for a helping. Want some?
Here's the recipe, if you'd like to try it, too.
Mix together:
1 c. sugar
1/4 c. oil
3/4 c. apple sauce
2 eggs
1 small can pumpkin (or 2 cups cooked fresh pumpkin)
2 tsp. milk
Add:
4 cups flour
4 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cloves
2 c. choc. chips
Mix all together and drop by spoon on greased cookie sheet bake at 350*F for 10 or 15 minutes. ENJOY makes 3-4 dozen
