This illusion can be done with any colored liquid (colored for visibility only). The "gimmick" or "trick" is in the double-wall construction of the cups and the texturing on the outside that hides it.

That is a possibility, too. But the liquid really does appear to be changing consistency from the beginning to the end.

LOL...I've done the illusion many times.
His milk just gets thinned with water (which is inside the center tube of the double-walled glasses and therefore cannot be differentiated from the glass)

You'll note that you never see the tops of the glasses, even though the center tube stops just short of the exterior diamond texturing, and that all pours are done in an uncomfortable profile instead of naturally from the kids position.
If you look closely at the kids refraction in the largest glass you can see the outline of the center tube and during some of the pours you can see it through the diamonds.
If you use powdered dyes, you can "salt" the bottom of the center tubes and when you pour, the liquid starts changing colors.
My boss did an excellent routine called "Royal banquet". He salted the same color dye so the "wine" didn't fade and lose color.
