I've been busy making pies. Sometimes more than once a week.

Today's pie is cheddar, back bacon, asparagus, onion, and red pepper quiche. Nom nom nom....

I'm not normally a fan of quiche, but damn, this one is tasty!

Don't have the recipe handy, but I can remember it....

1 Tbsp cooking oil
1 onion, chopped
1 lb asparagus, broken into 1" chunks
1 red pepper, chopped
a couple pieces of back bacon, chopped
1 1/2 cups grated Cheddar
3 eggs
1 cup milk
salt and pepper
2 Tbsp fresh basil
1 pie crust

Heat oven to 400.
Sauté veggies for about 3-5 minutes in oil, until crisp/tender. Set aside.
Fry up bacon, mix with veggies.
Beat eggs, and mix together with milk, salt, pepper, and basil.
Put half of cheese in pie crust.
Put vegetable/bacon mix on top of cheese.
Put rest of cheese on top.
Pour milk/egg mixture on top.
Cook for 10 minutes at 400, then lower temperature to 325 and cook for another 10 minutes, until set.

YUM!

but i dont know, what ist pie crust? do you make it yourself or can you buy it?

Standard pie crust. I use store-bought frozen pie crust because home-made is a huge pain in the ass, and I find the store-bought tastes just fine.
